Monday Munchies ~ Sweet Potato Casserole Recipe

I don't have any pictures for this recipe...it doesn't stay around long enough, LOL!! If you or someone you know isn't fond of sweet potatoes, give this recipe a try. Jimmy wouldn't eat sweet potatoes or candied yams until I made this. Now he asks for it every Thanksgiving and Yule. Enjoy!


2 cups mashed sweet potatoes

1 cup white sugar

1/4 cup brown sugar (packed)

2 eggs (beaten)

3/4 up melted margarine

1 cup evaporated milk

1 teaspoon cinnamon

1/2 teaspoon nutmeg

Mix ingredients (will be soupy) and pour inot a glass baking dish (at least 2 qt). Bake at 400 degrees for 10 minutes. Take out and top with the following mixture:

1 cup corn flakes

1/2 cup chopped pecans

1/2 cup brown sugar (packed)

1/4 cup melted margarine

Mix ingredients and put on top of sweet potatoes. Bake for an additional 10 - 15 minutes, remove from oven, and allow to cool for 1 1/2 hours.
